The Trade Test System for Western Cuisine is designed to enhance the technical skills and knowledge of professional chefs. In collaboration with the German Culinary and Restaurant Academy of the German Chamber of Industry and Commerce Koblenz Germany, ICI provides relevant courses and examinations for chefs in Hong Kong to undergo trade tests in western cuisine.
The system consists of three levels, namely Certified Cook, Trainer Chef, and Master Chef. As students progress through the system, they acquire more in-depth management knowledge and skills.
ICI has also established collaboration with Handwerskammer (HwK) Koblenz, the competency centre for vocational training in the Koblenz area of Germany, to administer the Certified Pastry Cook Trade Test for in-service chefs to obtain a professional qualification in pastry and bakery.
